Description
Salted Egg Prawn is a dish of quickly deep fried lightly battered prawns dressed in a sauce made with butter and egg yolks spiced with curry leaves.
Ingredients
- 20 large prawns, shelled and deveined
- 8 pcs cooked salted egg yolks, mashed
- 1–2 sprigs curry leaves
- 1 egg, beaten
- 1/2 cup flour
- 1/2 cup cornstarch
- 2 tbsp butter
- ½ tsp sugar
- 1 clove garlic, minced
- oil
- salt
- pepper
Instructions
- Season prawns in sugar, salt and freshly ground black pepper.
- Combine flour and corn-starch on a large bowl.
- Dip each prawn into the beaten eggs then into the flour mixture. Deep fry in a 180C preheated deep fryer until prawns are cooked and golden brown, this will take around 2 to 3 minutes. Set aside cooked prawns.
- Prepare a wok, add oil then sauté garlic.
- Add the salted egg yolks, prawns, butter and curry leaves, stir fry until fragrant. Toss to completely coat the prawns with the sauce, serve.
Salted eggs available at Asian groceries. That world-wide internet seller is too expensive yet same brand at Asian groceries.
I’m not familiar with salted egg. Is it just egg yolks with salt? Or is it something different?
