Description

Hinalog na Manok is a dish inspired by three popular Filipino Chicken dishes, the tinola, sinampalukan and afritada. Ginger, chilli leaves and papaya came from tinola; the sinigang mix comes from sinampalukan; and the garlic, onions and tomato paste came from afritada.


Ingredients

  • 1 kg chicken legs and thighs
  • 1 bunch chilli leaves
  • 1 green papaya, sliced
  • 20 g sinigang mix
  • 3 tbsp tomato paste
  • 2 tbsp sriracha
  • 6 cloves garlic, minced
  • 1 red onion, minced
  • 1 thumb sized ginger, thinly sliced
  • water
  • fish sauce
  • white pepper
  • oil

Instructions

  1. In a pot add oil then brown chicken pieces. Remove the chicken then set aside.
  2. Add the garlic, ginger and onions, sauté in low heat for two minutes.
  3. Add the tomato paste then continue to sauté for a minute.
  4. Add the chicken back together with the sriracha, pour enough water to cover the chicken. Bring to a boil then simmer for 20 minutes.
  5. Add the papaya and sinigang mix then continue to simmer for 15 minutes.
  6. Add the chilli leaves then simmer for 2 more minutes, season with fish sauce and white pepper then serve.
