Description
Smoked Salmon in Tomato and Caper Sauce is a dish of baked smoked salmon served on a bed of sauteed tangy chunky tomato sauce.
Ingredients
- 3 pcs large smoked salmon steaks (200 – 250 g each)
- 400 g can Italian style chopped tomatoes
- 4 pcs Roma tomatoes, chopped
- 3 tbsp capers
- 1 large white onion, chopped
- 6 cloves garlic minced
- 1 tsp sugar
- 1 tsp dried oregano
- handful of roughly torn basil
- freshly ground black pepper
- salt
- olive oil
Instructions
- In a pan, add olive oil then sauté garlic and onions until onions are soft.
- Add the tomatoes, sugar and basil, cook until tomatoes are soft.
- Pour the Italian style chopped tomatoes, dried oregano and capers then bring it to a boil, simmer for 5 minutes covered.
- Season sauce with freshly ground black pepper and salt.
- Place salmon in an oven proof dish then pour chunky tomato sauce on top, place in a 230C preheated oven then bake for 15 minutes. Remove from oven then serve immediately.
