Smoked Salmon in Tomato and Caper Sauce is a dish of baked smoked salmon served on a bed of sauteed tangy chunky tomato sauce.

What’s better than a Salmon cooked in a rich chunky tomato sauce? Well its Smoked Salmon cooked in a rich chunky tomato sauce! Adding that smoked factor gives this dish more life and tons of flavour. I usually cook this using fresh salmon but one day one of our friends brought over some smoked salmon steaks and I don’t know where to use it so I cooked it this way instead and since then I was changed and will definitely not use fresh salmon on this dish anymore, it just gives a lot of life to this dish. How about you how would you use whole smoked salmon steaks? If you can’t find smoked salmon at your local supermarket you can also buy a whole one and smoke it at the comfort of your own home, either by traditional smoking or better yet get some electic smokers.

Smoked Salmon in Tomato and Caper Sauce

Description

Smoked Salmon in Tomato and Caper Sauce is a dish of baked smoked salmon served on a bed of sauteed tangy chunky tomato sauce.


Ingredients

Scale
  • 3 pcs large smoked salmon steaks (200250 g each)
  • 400 g can Italian style chopped tomatoes
  • 4 pcs Roma tomatoes, chopped
  • 3 tbsp capers
  • 1 large white onion, chopped
  • 6 cloves garlic minced
  • 1 tsp sugar
  • 1 tsp dried oregano
  • handful of roughly torn basil
  • freshly ground black pepper
  • salt
  • olive oil

Instructions

  1. In a pan, add olive oil then sauté garlic and onions until onions are soft.
  2. Add the tomatoes, sugar and basil, cook until tomatoes are soft.
  3. Pour the Italian style chopped tomatoes, dried oregano and capers then bring it to a boil, simmer for 5 minutes covered.
  4. Season sauce with freshly ground black pepper and salt.
  5. Place salmon in an oven proof dish then pour chunky tomato sauce on top, place in a 230C preheated oven then bake for 15 minutes. Remove from oven then serve immediately.

    My girl loves salmon. We just rub the skin with salt and pepper and pan grill till crispy and the fish is cooked. She likes it that way.
