Ginger Scallion Sauce is a sauce made from finely minced ginger, spring onions / scallions, oil and salt usually served with roasted poultry or pork.

Ginger Scallion Sauce is a sauce made from finely minced ginger, spring onions / scallions, oil and salt, though this sauce is not popular as it may seem but it usually accompanies a lot of Chinese dishes like soy sauce chicken, roast chicken, roast duck and Hainanese chicken. Like ketchup, gravy and other sauces the main reason for using it is to enhance the flavours of the meat but unlike those sauces this does not take over the taste but enhances it better plus give a good moisture on the meat. It may sound odd but once the ginger is mixed with the scallions and oil it mellows it down and gives it a pleasant taste.

  1. In a large heat proof bowl combine ginger, spring onions, sea salt and sesame oil. Set it aside
  2. In a pan heat oil until its near its smoking point, pour into the bowl with the rest, stir then let it cool. Season with more salt if needed, it should be salty.

    Hi Raymund, does this have to be peanut oil? Would I be able to use a neutral flavored oil?
