Kalua Pig or Kalua Pork is a simple dish of salted pork tightly wrapped in banana leaves then left to cook in an underground pit oven with hot lava rocks
- In a large baking lay you aluminium foil in the bottom, then the banana leaf. Place pork on top then run it all over with smoked sea salt and liquid smoke flavouring. Cover pork completely with the banana leaf then with the aluminium foil, completely seal it off then roast in a 165C preheated oven for 5 hours.
- Remove it from the oven, discard the aluminium foil and banana leaf. Place pork in a serving platter then shred the pork using fork. Sprinkle smoked sea salt on top before serving.
