Sawsawan is a Tagalog word for dip, typically made with vinegar with herbs and spices like garlic, onion, chillies, peppercorn, sugar and salt.


  • 2 cups vinegar
  • 1 large red onion, chopped
  • 6 cloves garlic, pounded
  • 1 tbsp black peppercorn
  • 3 pcs red chillies, sliced
  • 1 pc scotch bonnet, minced
  • 3 tbsp sugar
  • 1/2 tsp sea salt


  1. In a large mason jar combine all ingredients, mix it well then cover and refrigerate. Best used after 3 days to the flavours blend well.
