Bok Choy and Bacon in Tomato Sauce

  • 2 bunches bok choy, chopped
  • 200 g bacon scraps, roughly chopped
  • 1 400g can chopped tomatoes
  • 2 tbsp bagoong monamon
  • 1 red onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • freshly ground black pepper
  • salt
  • oil


  1. In a wok add oil then cook bacon until golden brown and crispy. Remove the bacon then set aside.
  2. Using the same wok, sauté garlic and onions.
  3. Add the chopped tomatoes, bagoong monamon, dried basil and dried oregano, bring it to a boil then simmer in low heat for 5 minutes.
  4. Add the chopped bok choy bring back to a boil then simmer for 5 more minutes.
  5. Bring back the bacon then simmer for 2 more minutes.
  6. Season with salt (if needed) and freshly ground black pepper then serve.
