Menestra is a classic Spanish vegetable soup dish prepared with different Mediterranean vegetables like artichokes, Manzanilla olives and white beans as a base then spiced up with some paprika and sherry vinegar.


  • 4 pcs medium Spanish chorizo
  • 12 pcs mushroom, cut in half
  • 1 large potato, diced
  • 1 bunch asparagus, sliced
  • 1 red capsicum, sliced
  • 400 g can cannellini beans
  • 1 cup green peas
  • 6 pcs marinated artichokes, cut in half, reserve the liquid
  • 12 pcs olives
  • 2 cups boiling water
  • 1 tbsp paprika
  • 2 bay leaves
  • 1/2 tsp cayenne
  • 1⁄2 cup dry sherry
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • sea salt
  • freshly ground black pepper
  • parsley, to garnish


  1. In a large pot heat up olive oil then sauté garlic and onions.
  2. Add the chorizo, potatoes, mushrooms, paprika, cayenne and bay leaves, continue to sauté for a minute.
  3. Pour boiling water, the reserved liquid from marinated artichokes and dry sherry bring it to a boil then simmer for 5 minutes.
  4. Add the capsicum and asparagus then simmer for 2 minutes.
  5. Add the artichokes, peas and cannellini beans then simmer for 5 minutes.
  6. Add the olives, give it a good mix then season with salt and freshly ground black pepper. Simmer for a minute then serve while hot topped with parsley.
