Several weeks ago a friend of mine gave me a big bag of persimmon, not really a fan of this fruit but in order for it not to go to waste I had used it in something that I will like on a snack or dessert called Persimmon Loaf Cake. Persimmon Loaf Cake is a sweet loaf cake made with persimmon pulp, chopped dates and walnut topped with a semi sweet cream cheese icing.

If you love sweet breads like banana bread, zucchini bread and anything similar then I think you should give this a try, it’s in the similar category but with a different twist.

Ingredients

Persimmon Loaf

  • 2 1/2 cups flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 cups sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 2 cups persimmon pulp
  • 2 eggs
  • 1 cup walnuts, toasted and chopped
  • 1 1/2 cups chopped dates
  • 2 tsp vanilla

Cream Cheese Icing

  • 1 cup / 225 g cream cheese
  • 1/3 cup butter, softened
  • 1 cups powdered sugar
  • 2 tsp vanilla

Instructions

Persimmon Loaf

  1. In a bowl sift together flour baking powder, baking soda, salt, and sugar, set aside.
  2. In a mixing bowl whisk together the eggs, persimmon pulp, milk, and vanilla until smooth. Gently add the flour mixture and mix in low speed until no dry lumps remain. Fold in the walnuts and chopped dates.
  3. Pour mixture in 2 greased loaf pans and bake in a 150C preheated oven for 1 hr and 20 minutes or until a toothpick inserted into the centre comes out clean.
  4. Remove from oven then let it completely cool before applying your icing.

Cream Cheese Icing

  1. In a mixing bowl add butter and cream cheese, beat until well blended.
  2. Slowly add powdered sugar and vanilla then beat until smooth in texture.
  3. Apply icing on Persimmon Loaf then serve.

  2. Oh I would have take them off your hands! I LOVE persimmons but they are $$ here. And this is a lovely cake I would try for sure.

    No oil or butter in the cake batter. Is the cake dry or does the persimmon pulp keep it moist?
