Pork Ribs and Watercress Soup infused with red dates, dried shrimps and Chinese almonds
This I guess is one of the simplest recipes I ever encountered basically you just need to place everything in a pot then let it boil and cook, it’s that simple you don’t even need a recipe just a list on what you need to put on that pot. This is what I like with simple soups like this, its stress free no fuss cooking.
It might look simple but it has some good flavours on it coming from the pork bones helped by some red dates, dried shrimps and Chinese almonds which gives that unique and authentic flavours similar to other clear broth Chinese soups or congee, the combination of this ingredients gives that herbal feeling that gives that good comfort perfect in any cold winter night like what we currently have now.
In a pot place pork ribs, onion, Chinese red dates, dried shrimps, Chinese almonds, water and salt. Bring to a boil and remove any scum that rises on top. Simmer in low heat for 40 minutes.
Add the watercress then continue to boil for 20 more minutes, season with fish sauce and ground white pepper then serve while hot.

Here, we cook this at home using bayam, amaranth or whatever it is called – the vegetable is sweeter and nicer. Watercress here, we call it kangkong – not quite the thing for this dish.
