Like most beef stir fry the secret in making this dish is a really tender beef and to do that is a combination of a really hot wok and a secret ingredient on its marinate to give the jelly like texture. If you read my blog once in a while you will notice I use baking soda in beef, this is the secret ingredient as it tenderizes the beef like the ones you have in Chinese restaurant. As for the wok, you either need a really hot stove top and a pan that will not loose heat immediately so the meat will not have time to sweat.
