Smoked Salmon and Spinach Salad

Fish in salad sounds odd because were not used to it as most of the meats commonly used for your leafy greens are beef, chicken and occasionally prawns or squid but fish? Well most of us don’t even think of it. If we think of the common fish yes it’s quite weird but with smoked salmon then it changes your perception.

Cold Smoked salmon is quite a versatile ingredient, you can enjoy it on bagels, in sushi, in appetizers, pasta, omelettes and tacos to name some, having said that why not in salad.

Smoked Salmon and Spinach Salad

Serves: 3
  • 3 cups baby spinach leaves
  • ½ cup shredded smoked salmon
  • 2 tsp capers, rinsed
  • freshly ground black pepper
  • ¾ cup olive oil
  • ¼ cup white wine vinegar
  • 1 clove garlic, minced
  • 1 tbsp minced shallots
  • 1 tbsp Dijon mustard
  • freshly ground black pepper
  • salt
  1. In a bowl combine all dressing ingredients and set it aside for 15 minutes, whisk to combine.
  2. In a salad bowl combine spinach, salmon and capers.
  3. Drizzle dressing on top of salad, Sprinkle freshly ground black pepper then serve.
