Ceasar Salad with Popcorn Chicken

I guess everyone knows what a Caesar salad is, it’s one of the most popular salad recipes out there and almost all restaurants that serves salad probably have this on their. It became a staple dish in a lot of establishments because it’s a complete dish in a bowl where you have your protein from chicken, carbs from croutons and a good serving of vegetables from the salad greens, it’s also easy to make and a healthy alternative compared to some carbohydrate rich meals.

Today we will be making one but we will be adding a twist to this classic, so instead of grilled chicken we will be using some popcorn chicken instead and since this is breaded we will not be using some croutons anymore.

Ceasar Salad with Popcorn Chicken

  • 1 large egg
  • ½ cup olive oil
  • 2 tsp lemon juice
  • 1 tsp white vinegar
  • 2 tsp Worcestershire sauce
  • 1 clove garlic, minced
  • ½ tsp mustard powder
  1. In a mixing bowl add all dressing ingredients and mix using a hand mixer. Mix until emulsified and creamy.
  2. Mix all salad ingredients in a salad bowl then add dressing slowly while tossing salad, sprinkle with parmesan cheese generously.
