Description
Cornbread muffins or corn muffins is a type of baked bread made out of cornmeal cooked in a muffin pan. These types of breads or muffins are so versatile it can be a part of any meal like your mains, a snack or even a dessert.

- 1 cup cornmeal
- 1 cup flour
- 1/2 cup cooked corn kernels
- 1/3 cup white sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 egg, beaten
- 1/4 cup oil
- 1 cup milk
Instructions
- In a large bowl combine all ingredients and stir gently until smooth in texture.
- Place in muffin cup lines muffin trays and bake in a 200C preheated oven for 15 to 20 minutes or until cake tester comes out clean.
