It seems everyone is loving the combination of beetroot and orange at the moment. I posted a similar salad recipe (used some smoked fish in it too) the other day on my blog and now they just seem to be popping up everywhere. Obviously great minds think alike!
I am obsessed with beetroot this summer, took a bit to get into eating it, but when I started cooking the beets in an orange glaze, it really made them pop. Your salad is a stunner, vibrant and appetizing. 🙂
