This Chickpea, Feta and Avocado Salad is really simple the just toss everything with lemon and olive oil.
Having some extra or leftover feta cheese is handy especially when you want to make some salad, it’s such a good ingredient to add as it gives that creamy salty texture that enhances the flavour of any salad. Several weeks ago I have half a block of these and thought why not toss it together with some avocadoes and chickpeas, this is the result.
Looks and sounds delish!!

I’ve already had lunch but my mouth is watering. The fat from the avocado and cheese will make it really filling too
I really like this recipe. I’ll have to try it soon! Last week I shared a tuna chickpea salad recipe I think you would like: http://thefiteat.com/2014/01/06/snowed-in-tuna-chickpea-salad-recipe/
I love your salad. I always end up stuffing my salads with herbs but I like the idea of heaps of cilantro. Yum.
