Long time ago I had posted a review regarding a pizza parlour in Brisbane, Australia and that pizza was unforgettable as it was really good especially the Chicken and Spinach pizza that why today I am trying to recreate it at my own home with some adjustments to even make it even better.

To see what was on the ingredients of that pizza I have to resort to the photos we had and I was lucky I have a high resolution image taken of me with the window menu choices as background which shows all of its main ingredients. So in this post I will make my own version of that pizza with some adjustments like using camembert cheese, smoked chicken and using flour tortillas as its base.

Description

This Smoked Chicken, Spinach and Camembert Pizza was inspired by a pizza parlour in Brisbane, that Chicken and Spinach pizza was unforgettable as it was really good that is why today I am trying to recreate it at my own home with some adjustments to even make it even better.

Ingredients

Scale

Pizza

  • Smoked chicken, sliced
  • Baby spinach leaves
  • Camembert cheese, sliced
  • Mozzarella, grated
  • Parmesan, grated
  • Freshly ground black pepper
  • White onions, finely chopped
  • Freshly ground black pepper
  • Flour tortillas

Pizza Sauce

  • 1 cup tomato puree
  • 4 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1 tbsp chopped basil
  • 2 tbsp olive oil

Instructions

  1. Mix all Pizza Sauce ingredients together.
  2. Place lightly brush bottom end of the tortilla with olive oil then place on a pizza stone. If you want the base to be a bit thicker add another tortilla on top and brush a small amount of water in between them so they stick together.
  3. Place your toppings by applying pizza sauce initially, then add the onions, smoked chicken, freshly ground black pepper, camembert, mozzarella cheese and parmesan cheese.
  4. Place in a preheated over at 180C for 10 to 15 minutes or until base is golden and crispy.
  5. Remove from oven then top with fresh baby spinach leaves

Notes

Sauce yields roughly about 1 cup

Yum – nice mixture of cheeses to give it more depth of flavor. I usually use pocketless pita bread when I make mini pizzas like this and have never even thought to try using flour tortillas. I’m giving that a shot next time!

Camembert on a pizza? Now that’s an interesting twist. I bet is goes fantastic with the smoked chicken! It’s good to see someone else using flour tortillas as a pizza base! They are perfect when you don’t have time to make the regular dough. Love this little pizza and it’s perfect for this time of year because it’s comforting, but different. Love it!

  15. Such nice flavors. I haven’t had Camembert in ages (my usual default for this type of cheese is Brie), and I don’t know why – it’s flavor is wonderful. Great toppings – really delish looking. Thanks.

  16. Japanese love camembert cheese and it’s one of commonly eaten cheese there, but I hardly see it consumed much here (maybe because there are more kinds of cheese?). I’m curious how this pizza tastes like with camembert cheese!

  17. Pizza with fresh greens is always a winner in my book!! Looks fabulous!! xo

This is a twist with the tortilla shells. I have not done it this way. I buy a smoked chicken pizza occasionally, so will have to see what can be done with your recipe for some variety.

  19. Hi Raymund, I hope you’ll bring this and other pizza’s over to the Food on Friday pizza party! Cheers from Carole’s Chatter
