Description

Happy family is a popular Chinese stir fry dish which consists of colourful vegetables like broccoli, baby corn, mushrooms and carrots mixed cooked with different meats like beef, pork, chicken, shrimp, lobster and scallops served in flavourful brown gravy.

Stir Fry

  • 100g pork belly, sliced
  • 100g deboned chicken thighs
  • 100g beef, sliced
  • 1 cup small shrimps, peeled
  • 1 small head broccoli, cut into florets
  • 1 carrot, sliced
  • 12 pcs baby corn, cut lengthwise
  • 1 cup button mushrooms
  • 1 red capsicum, sliced
  • 1 cup cooked bamboo shoots
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 2 tbsp Chinese cooking wine
  • 1 tsp cornstarch
  • 1/4 tsp baking soda
  • salt
  • peanut oil

Brown Sauce

  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp sesame oil
  • 2 tbsp Chinese cooking wine
  • 1 1/2 cup chicken stock mixed
  • 1 tbsp of cornstarch
  • salt
  • sugar
  • white pepper

Instructions

  1. In a mixing bowl mix together Chinese cooking wine, baking soda, cornstarch and salt.  Add the chicken, beef and pork and let it marinate for at least 30 minutes.
  2. In a separate mixing bowl mix together all brown sauce ingredients then set aside.
  3. In a pot add water then bring it to a boil, once boiling add broccoli then blanch for 30 to 45 seconds.  Drain then rinse with running tap water then set aside.
  4. Prepare a really hot wok then add oil, sauté garlic and onions.
  5. Add the carrot, baby corn, mushrooms, capsicum, bamboo shoots and salt stir fry for 2 minutes; add the broccoli and shrimps then stir fry for 30 more seconds.  Remove from wok then set aside.
  6. Using the same wok add oil then cook chicken, beef and pork on really high heat while continuously stir frying, after 60 to 90 seconds your meat should be cooked and tender, do not overcook as the meat will be tough.
  7. Toss the vegetable back together with the brown sauce which was prepared earlier then bring it to a boil, cook for 1 to 2 more minutes then serve with rice.
