Stir Fried Pork Fillets with Honey and Ginger
Day 3 of the stir fry series and it will be Honey, Lemon and Ginger combination, which in my personal opinion is one of the great combination of flavours ever discovered. It can be used in sweet desserts and drinks (hot or cold), this concoction not only tastes good but it has a lot of health benefits that is why its tea version is the best cold and flu home remedy. Lemon contains a lot of Vitamin C, Ginger have a good antioxidant and anti-inflammatory properties and Honey helps you to boost your immune system, mixing them together will yield a very potent potion to cure that bad viruses away. Having known that why don’t we use this as a base flavour for a savoury dish to have these health benefits in a plate and what a better way to use that on a simple stir fried pork and scallions.
Ingredients
500g pork tenderloin, thinly sliced
3 spring onions, sliced
1 tbsp light soy sauce
1 tbsp water
2 tbsp honey
juice from 1 lemon
peanut oil
salt
freshly ground black pepper
Ingredients (Marinade)
3 tbsp honey
1 tbsp fish sauce
2 tbsp dark soy sauce
2 tbsp Chinese cooking wine
1 tbsp oyster sauce
2 tsp five-spice powder
2 tbsp ginger paste
3 cloves garlic, minced
1 tbsp sesame oil
1/2 tsp baking soda
Method
- Combine all marinade ingredients then pour mixture over the pork, set it aside and let it marinate for at least an hour.
- Prepare a really hot wok then add peanut oil. Stir fry pork in small batches in very high heat, it would only take at max 1 minute per batch, once a batch is cooked set it aside.
- Bring all cooked pork together then add the soy sauce, water, honey and scallions. Stir fry for 1 more minute turn off heat, pour lemon juice on wok, and give it a mix then serve.

I love how lacquered that pork ended up looking. While I usually drink honey ginger tea, I’d never thought to make a glaze for pork with it. Great idea!
