  15. Kathryn says:

I do a really plain version of this–just the cucumbers, vinegar, sugar, salt and pepper–and its simplicity is such a welcome complement to heavy or spicy or oily foods, but I agree that a little pizzazz would be a great plus as well, so I may just put in those chiles next time!

Ooo, I’ve never had this but definitely want to try it. I love cucumbers but unfortunately my husband hates them (completely weird I know). I’m going to make this next time I head up to my family’s. Do you soften the chilies in water first or just use them dried?

  17. Perfect – can´t wait for summer and a garden full of cucumbers!

  18. I love pickles like this because as you say, it really helps to cut through the richness of fatty (read: yummy) food.

  21. Wonder if this is very similar to Thai cucumber salad – I just had it a few days ago… seems similar but never had seen Thai cucumber salad recipe so I can’t tell. I love that salad, and I bet I can eat a lot of this salad. Will give this a try very soon!

  22. I really like the amount of vinegar and the dried chillies in this recipe. I’ll bet hot, fresh chillies would be great too. Thanks for this.
