Description
Sweet and Sour Cucumber Salad is a type of side salad made out of thinly sliced cucumber dressed with a sweet and spicy vinegar.
Ingredients
- 2 Medium Telegraph Cucumbers, thinly sliced
- 3/4 cup white vinegar
- 1/4 cup water
- 5 chillies, deseeded and finely chopped
- 2 tbsp sugar
- 1/2 tsp salt
- 1 tsp sesame oil
- freshly ground black pepper
Instructions
- In a bowl mix together vinegar, chillies, sugar, salt sesame oil, and freshly ground black pepper
- Add cucumbers into the bowl and mix to coat evenly with the vinegar sauce.
- Place in bowl then serve.

I do a really plain version of this–just the cucumbers, vinegar, sugar, salt and pepper–and its simplicity is such a welcome complement to heavy or spicy or oily foods, but I agree that a little pizzazz would be a great plus as well, so I may just put in those chiles next time!
