Chicken Sopas

Chicken Sopas is a Filipino macaroni soup dish prepared with chicken, eggs, carrots, garlic and onions then made creamy with evaporated milk.

Before I had posted a dish called Beef Sopas and now will be making the more popular version of this soup which is the Chicken Sopas. Sopas as I had mentioned is a Tagalog word for soup and it had originated from the Western Chicken Soup and like chicken soup it contains chicken, noodles and vegetables the difference is the amount of those ingredients where Filipinos tend to use more noodles and lesser vegetables (mostly carrots) and in most cases none. Soup is flavoured and coloured with milk as opposed to turmeric.

My daughter loves this lot and every time I ask her what she wants for next week’s menu, she would definitely include this always, so if you have kids try this at home as they will definitely like it. A very hearty soup which is recommended during cold days or to give relief to sick people. Best enjoyed on its own or with bread.

Description

Chicken Sopas is a Filipino macaroni soup dish prepared with chicken, eggs, carrots, garlic and onions then made creamy with evaporated milk.


Ingredients

Scale
  • 2 1/2 cups macaroni
  • 1 1/2 cup cooked chicken, flaked
  • 1 carrot, chopped into small cubes
  • 2 cups chopped cabbage or Chinese cabbage
  • 6 boiled eggs
  • 68 cups chicken stock
  • 1 large can evaporated milk
  • 1 large white onion, chopped
  • 4 cloves garlic
  • butter
  • freshly ground black pepper
  • salt

Instructions

  1. In a pot melt butter then sauté garlic and onions.
  2. Add chicken stock, bring to a boil
  3. Add macaroni pasta simmer for 10 minutes.
  4. Add chopped carrots, cabbage, chicken flakes simmer for 5 minutes.
  5. Add evaporated milk and boiled eggs simmer for 2 more minutes.
  6. Season with salt and pepper.

  4. Lovely soup and another complete meal by its own with all those ingredients inside, sure filling up. That macaroni is not for me but sure the mee hoon or yellow noodles will be great too.

    Oh, we just had this Chicken Sopas for dinner tonight. Although it wasn’t as good coz the milk I used was the powdered kind and not evap milk. The big kiddos here liked it nevertheless.

  8. It sounds like a delicious cousin of the Chicken Noodle Soup that lots of American kids have grown up loving and eating. I wonder just how many cultures have their own versions of chicken + pasta soups! It’s such a delicious and soothing combination that it just might be universal!

    We love chicken sopas…. But my kids doesn’t want the chicken… Macaroni and veggies only…. Will it taste the same without the chicken???

      If you will be using chicken stock yes it will taste the same, but if you want a totally vegetarian option you can use a good vegetable stock. You can also add chopped cabbages as a replacement for the chicken.

    Chicken soup is the favorite at my house, and not just when somebody’s sick! When cold weather comes around, it’s requested often. Yours looks really good! I’ve never used evap. milk in mine, but it sounds like it would make it nice and creamy. Yum! 🙂
