Bicol Express is a dish from the Philippine province of Bicol made with pork and chillies cooked in a coconut gravy sauce with fermented shrimp paste, known for its spicy and creamy taste.


Units Scale
  • 800 g pork belly, diced (small)
  • 1/2 cup dried shrimps or 3 tbsp bagoong (shrimp paste)
  • 610 finger chillies, julienned
  • 6 cloves garlic, minced
  • 1 red onion, chopped
  • 3 cups coconut milk
  • salt
  • freshly ground black pepper
  • red chillies, to garnish


  1. In a pan sauté garlic and onions.
  2. Add the pork belly stir fry for a couple of minutes.
  3. Add the 2 cups of coconut milk and bagoong then bring to a boil and simmer in medium heat for 20 minutes or until the coconut milk had reduced to a thick oily gravy.
  4. Add the chillies and add the remaining cup of coconut milk and continue to simmer for 10 minutes.
  5. Add salt and pepper to taste.
  6. Garnish with red chillies
