Description

Sinigang na Bayabas is a Filipino Soup dish prepared with Pork belly vegetables and tomatoes cooked in a soup infused with guava and hints of tamarind


Ingredients

  • 1 kg Pork Belly, Cubed
  • 2 cups unripe guavas (I chose two varieties the tropical and cherry guava), sliced
  • 2 medium tomatoes, quartered
  • 1 large onion, quartered
  • 1 small packet sinigang (tamarind) mix
  • 1 bunch spinach
  • 2 cups taro, cut into cubes
  • 1 okra, cut into 2 inch pieces
  • fish sauce
  • pepper

Instructions

  1. Place pork, onion, tomatoes and guavas in a pot, pour water in pot until everything is barely covered. Bring to a boil then simmer for 45 minutes
  2. Add taro then continue to simmer for 10 minutes.
  3. Add the sinigang mix and okra and cook for 10 minutes
  4. While boiling add the spinach leaves and cover, turn of the heat.
  5. Season with pepper and fish sauce
