Kamote Cue is a Filipino snack dish made with deep fried sweet potatoes coated in hardened melted sugar
- 4 large pieces of sweet potatoes / kumara, cut into bite sized sections
- 1/2 cup brown sugar
- cooking oil, enough for deep frying
- pinch of salt
- Heat oil in wok, add sweet potatoes and brown sugar. Deep fry in medium heat until sugar caramelizes, once the sugar melts add the salt then give it a good mix so that the sweet potato pieces will be coated with the melted sugar.
- Using a slotted spoon, remove sweet potato pieces, place in skewers then let it cool in a wire rack before serving.
