Beef Courgettes and Capsicum Stir Fry
Another free style stir fry dish from yours truly, I can’t think of what to serve today but we have the proper ingredients left on our fridge to have a tasty dish! Beef, courgettes, dried mushrooms and yellow capsicums. It’s a good mix of flavours from the earthy mushroom to the sweet capsicums; it also has a good mix of colours and textures. Now to give this dish another dimension to its flavour we will be using soy sauce and Chinese wine. A really easy dish to prepare but flavourful enough that will leave you asking for more, Try it out and enjoy!
Ingredients
600g Beef Sirloin, sliced thinly
7 pcs dried shiitake mushrooms, soaked in water and sliced
3 pcs courgettes, sliced
1 white onion, sliced
1 large yellow capsicum, sliced
1 large orange capsicum, sliced
1/4 cup soy sauce
1/4 cup Chinese white wine
1 tsp cornstarch
1 tsp black pepper
3 tbsp peanut oil
2 tbsp sesame oil
Salt
Method
- In a really hot wok add peanut oil and stir fry beef slices and mushrooms for 4 minutes.
- Add courgettes, capsicum and onions and continue to stir fry for 2 more minutes.
- Mix cornstarch, Chinese white wine and soy sauce. Add to the wok and let it boil for 2 more minutes.
- Drizzle sesame oil on top and season with pepper and salt
I absolutely LOVE stir fries and I am really looking forward to making this tomorrow evening (hopefully). After being away for 2 weeks, my fridge is empty so need to get to the grocery store,
