Binagoongan is a Filipino dish made with fatty pork pieces cooked in a vinegar and fermented shrimp paste spiced with green finger chillies


  • 1 kg Pork Belly, cubed
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 4 tbsp bagoong
  • 5 cloves garlic, minced
  • 1 red onion, finely chopped
  • 2 pcs large tomatoes, chopped
  • 1 tbsp sugar
  • 3 pcs bay leaf
  • 6 pcs green finger chillies
  • freshly ground pepper
  • oil


  1. In a pot add oil and brown the pork on all sides.  Remove then set aside.
  2. Now add the garlic and onions then saute until onions are soft.
  3. Add the tomatoes and stir fry until tomatoes are soft.
  4. Now bring back the pork then add vinegar, bay leaves and water, simmer for 45 minutes or until pork is tender.
  5. Add in the bagoong, sugar and finger chillies then continue mixing until liquid has reduced.
  6. Season with freshly ground pepper.
