Cajun Spiced Chicken Thighs

Spice makes food amazing that is why during the old days when these was scarce and not yet available globally people fought for it in wars, just imagine how food would be without them? It would be boring. Lucky for us today we don’t have to fight for it, it’s even cheaper to buy them nowadays compared to those times but still some spices remain expensive. Spice alone is great but combine them together to create something is even more incredible just look at the Curry Powder, Garam Masala, Jerk Spice, Dry Rub and Chinese Five Spice to name some.

Today we are using a spice mix from the South Central USA the Cajun Spice mix. Composing of paprika, black pepper, cayenne pepper, oregano, thyme, red pepper flakes, garlic and onion this Cajun Spice mix contains some good aromatics and elements that can give some heat any dish. With this mix we will be applying them in some chicken thighs, cook it in the most appropriate way which is by grilling to achieve the perfect flavour.

Serves: 6
  • 6 pcs chicken thighs
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
Cajun Spice Mix
  1. Combine Cajun Spice Mix ingredients in a small bowl then set aside.
  2. Rub it in the chicken thighs with the olive oil then with minced garlic and the Cajun Spice Mix.
  3. Place in a Ziploc bag and let it marinate for 2-3 hours.
  4. Prepare a charcoal or gas grill and cook for 10 minutes on each side or until chicken is cooked thoroughly.

    Oh my! Beautiful!!! The chicken thigh looks so big, so much meat – not like our shrunken ones at some places here, even the texture of the meat is not nice, much less the taste. Bet yours would be heavenly plus all the herbs and spices added! Yummmm!!!!
