For the Westerns there is a saying “an apple a day keeps the doctor away”, we’ll have you ever wondered what’s the Eastern counterpart? If you don’t then let me introduce you the Chinese Herbal Chicken Soup. Chinese Herbal Chicken Soup is not your typical chicken soup, it’s a classic Cantonese recovery soup that was served usually to new mothers for centuries, it was also used for people who are sick, weak or have low energy.

This soup have two different versions one is the Qing Ji Tong which is made from yellow vikon chicken and the other one called Wu Gu Ji Tong which is made from black silkie chicken. The black chicken version is the most prized recipe because since the seventh century it was believed that the black chickens have medicinal properties.

Apart from the healing power of the chicken used the full ingredients list have different properties that makes this soup dish very potent like ginger, red dates, goji berries, longan, snow fungus and straw mushrooms. I know it sounds like a witchcraft but trust me it’s better than it sounds and it really gives you that energy you need when you are not feeling really great.

Serves: 5-6
  1. Place chicken, straw mushrooms, ginseng tails, jujube fruit, snow fungus, lotus seeds and salt in a pot pour enough water to cover everything. Bring to a boil then simmer for 1 hour or until chicken is tender.
  2. Serve in soup bowls garnished with lots of chopped spring onions.

  1. My mom always uses the pre-packaged herbs when making herbal chicken, but the herbs used are largely similar to yours. Reminds me of home!
